Mushroom & Veggie Soup
Ingredients:
1 Tablespoon of olive oil
1/2 onion finely diced
2 garlic cloves finely diced
2 large carrots finely diced
1 celery finely diced
1 cup of leeks finely diced
1 pound of mushrooms sliced
1 teaspoon of sea salt
pinch of black pepper
4 cups of vegetable stock
1 cup of coconut milk
1 1/2 Tbs. arrowroot starch
2 Tbs. tamari
1 Tbs. apple cider
2 Tbs. nutritional yeast
Procedure:
Heat the oil in a pot with the veggies (without mushrooms), garlic and onion and stir for about 5-6 minutes.
Add the mushrooms and stir for another 5 minutes
Add the vegetable stock and coconut milk
Add the salt, pepper, tamari, apple cider and nutritional yeast
Whisk the arrowroot starch until there are no lumps in your soup
Bring down heat to a simmer and let it cook for about 20 minutes
