Gazpacho Soup

Gazpacho Soup

Ingredients:

  • 1 16oz can of tomatoes

  • 1 1/2 TBS. red wine vinegar

  • 1 large ripe tomato

  • 1 small cucumber

  • 1/4 onion

  • 1/2 red bell pepper (seeded)

  • 1/4 TSP. sea salt

  • 1/4 TSP. black pepper

  • 1 1/2 cups of vegetable broth

Procedure:

  • Place all ingredients in a high speed blender

  • Place in pot on stove with low heat

  • Cook for about 20 minutes
